
The Food Safety series is a comprehensive annual summary of the
literature on food safety and foodborne illness. Focusing on health and
safety, including extensive reviews of microbiological and medical subjects,
each volume:

emphasizes diet and health, particularly in their relation to cancer and
cardiovascular disease;

discusses food- and waterborne bacterial, parasitic, viral, and mycotoxin
intoxications and infections;

provides information on pesticides, organochlorines, heavy metals, veterinary
drugs, and other residues in foods;

examines data on the safety of various food additives and naturally occurring
toxicants; supplies overviews of epidemiological and intervention studies
in humans, experimental studies in primates, and salient papers on rodents.
Journals covered by the Life Sciences and Agriculture, Biology & Environmental
Sciences editions of Current Contents were surveyed. Articles from more
than 600 sources are included in each year's volume.
